Simple and rewarding pancakes

Looking for simple breakfast options? Well here's your answer. :) Base vegan pancakes that can be rolled/supplied with any fruit/jam/nuts of your choice. Got the inspiration and base recipe from a great Lithuanian vegan food blog kavalgoveganai.lt

Time
15-20 min

Ingredients
For two people:

A cup of flour
Half of a cup of soy/rice/almond milk
Half of a cup of water 
A small dash of baking powder
Some fresh, finely chopped vanilla
3 spoons of sugar (both brown and birch work well)
A dash of salt
Coconut fat/oil (or other high "smoke point" oil)
 
The magic
Grab a bowl and mix all of the ingredients in it. The consistency will affect the end result - if you want really thin, rollable pancakes, add more milk/water. Otherwise, the given mixture will produce pancakes similar to the ones in the picture above. Preheat your pan with some oil in it to medium heat. Grab a bigger spoon and pour the mix. Flip the pancakes when time is right and don't let them burn. :)

That's about it. While the cakes are frying, cut some fruit or roast some nuts. They go great with agave syrup, too!

Amazingly simple and delicious Zucchini/ Courgette/ Squash patties for vegan burgers









Zucchini/ Courgette/ Squash patties

I must admit I am having some troubles with patties.. in general... I tried many recipes and somehow I didn't like any of them... too dry, too oily, falls apart, too chewy.. etc etc...
Couple of days ago out of sudden passion I decided... today is the day! :) So I found a simple recipe with courgette as that's what we had from DD. 

Time
Approx. 15-20 min 

Tips
You may want to start with the side dishes as the patties get done pretttty fast :)

Ingredients
For 2 people 
  • 1-2 big courgette (app. 500g)
  • 150g flour (we used whole grain)
  • 50g breadcrumbs
  • 1-2 cloves of garlic
  • 1 tbs (table spoon) salt
  • little pepper
  • 1 ts (tea spoon) marjoram
  • 1 ts oregano
  • Oil for cooking
   Side choices:
  • We made some french fries and salad. It was AMAZING all together
  • Or could be a patty for burgers
    
The Magic

1. Wash the courgettes, grate them add all ingredients
2. Chop the garlic and add to the paste (should be soft, but easy to handle)
3. Heat up the oil (enough to the patties to sink in) - medium heat
4. Form patties and put it in the oil, fry it until it becomes light golden brown
5. Make the fries, salad, etc or burger buns

Voila, that's it! Enjoy :)

Vegan Mediterranean pan pie


Mediterranean pan pie

Well, I found this recipe on a fellow vegan blogger's website and fell in love with it. Simple, 30-40 min to make and really, REALLY nice!
Crispy, fresh, suPPPPPer delicioso!

Time
Approx. 30 -40 min 

Ingredients
For approx. 2 portions (2 pies)

The dough:
  • 300g flour   
  • 1.5- 2dl of water
  • 1/2 tea-spoon of baking powder
  • 1/2 tea-spoon dried yeast (VEGAN: 8 or 15kr in the health shop)
  • 1 tea-spoon of salt
  • 3 table-spoons of coconut oil or olive oil
  • Mushrooms (optional!)
The filling:
  • 150g of fresh spinach
  • 2 cloves garlic
  • 1 small onion
  • 1 table-spoon of parsley (we used fresh)
  • 1/2 table-spoon of mint leaves (again, we used fresh)
  • 1 table-spoon of lemon juice
  • salt, pepper and some basil 
Taste/ Decoration:
  • 1 Tomato
  • Serve the pies with a freshly mixed salad


The Magic

1.  Make the dough by adding all ingredients and knead it for a couple of minutes, until you get a dough which is easy to handle and doesn't stick (we used white flour first (from Dumpster Diving)- it was quite easy to handle, and was more fluffy, 2nd time we used wholegrain/corn flour - it was a bit challenging to handle but tasted nice as well)
2.  Cover the dough with a kitchen towel and start to make the filling PLUS slice the tomatoes (let the yeast do its job until you make the filling)
3.  Chop the onion and garlic finely and start to roast on a table-spoon of coconut oil
4.  Cut the spinach into strips (don't worry, it doesn't have to be fine or accurate they will soften up super fast in the pan) and add it to the pan among all the other ingredients, add salt, pepper and basil
5.  Roast it a bit then, scoop it to a bowl
6.  Divide the dough into 4 equal balls. 
7.  Stretch 2 balls of the dough into disk shapes (same or smaller size as the pan you just used for the filling) and put one disk into the pan with 1-2 spoon of coconut fat/oil
8.  Add HALF of the filling and put the 2nd disk of dough on the top (press it together a bit on the edges so that the two halves would stick together)
9.  Roast it on ONE side, then flip and roast the OTHER side (give a couple of minutes on medium heat for each side)
10. Take it out when its light/golden brown and top it with the sliced tomatoes
11.  Repeat the steps 7. to 10. to make another pie and ENJOY it with a friend! :)




Tips
1.     When we used mushrooms, we just roasted them among the onion and garlic, so they became nicely golden brown :)
