Vegan Mediterranean pan pie


Mediterranean pan pie

Well, I found this recipe on a fellow vegan blogger's website and fell in love with it. Simple, 30-40 min to make and really, REALLY nice!
Crispy, fresh, suPPPPPer delicioso!

Time
Approx. 30 -40 min 

Ingredients
For approx. 2 portions (2 pies)

The dough:
  • 300g flour   
  • 1.5- 2dl of water
  • 1/2 tea-spoon of baking powder
  • 1/2 tea-spoon dried yeast (VEGAN: 8 or 15kr in the health shop)
  • 1 tea-spoon of salt
  • 3 table-spoons of coconut oil or olive oil
  • Mushrooms (optional!)
The filling:
  • 150g of fresh spinach
  • 2 cloves garlic
  • 1 small onion
  • 1 table-spoon of parsley (we used fresh)
  • 1/2 table-spoon of mint leaves (again, we used fresh)
  • 1 table-spoon of lemon juice
  • salt, pepper and some basil 
Taste/ Decoration:
  • 1 Tomato
  • Serve the pies with a freshly mixed salad


The Magic

1.  Make the dough by adding all ingredients and knead it for a couple of minutes, until you get a dough which is easy to handle and doesn't stick (we used white flour first (from Dumpster Diving)- it was quite easy to handle, and was more fluffy, 2nd time we used wholegrain/corn flour - it was a bit challenging to handle but tasted nice as well)
2.  Cover the dough with a kitchen towel and start to make the filling PLUS slice the tomatoes (let the yeast do its job until you make the filling)
3.  Chop the onion and garlic finely and start to roast on a table-spoon of coconut oil
4.  Cut the spinach into strips (don't worry, it doesn't have to be fine or accurate they will soften up super fast in the pan) and add it to the pan among all the other ingredients, add salt, pepper and basil
5.  Roast it a bit then, scoop it to a bowl
6.  Divide the dough into 4 equal balls. 
7.  Stretch 2 balls of the dough into disk shapes (same or smaller size as the pan you just used for the filling) and put one disk into the pan with 1-2 spoon of coconut fat/oil
8.  Add HALF of the filling and put the 2nd disk of dough on the top (press it together a bit on the edges so that the two halves would stick together)
9.  Roast it on ONE side, then flip and roast the OTHER side (give a couple of minutes on medium heat for each side)
10. Take it out when its light/golden brown and top it with the sliced tomatoes
11.  Repeat the steps 7. to 10. to make another pie and ENJOY it with a friend! :)




Tips
1.     When we used mushrooms, we just roasted them among the onion and garlic, so they became nicely golden brown :)
